Tomberry & Cucumber Kale Salad with Creamy Lemon-Tahini Dressing

FOR 4 SERVINGS | INGREDIENTS:

TOMBERRY & CUCUMBER KALE SALAD:
- 320g mixed baby kales
- 1 small red onion, peeled, finely sliced
- 1 cucumber (454g), peeled and diced
- 250g tomberries
- 60g salted roasted cashews

CREAMY LEMON-TAHINI DRESSING:
- 90g tahini
- 90g fat-free plain Greek yoghurt
- 90ml lemon juice
- 90ml water
- 2 garlic cloves
- ¼tsp salt
- ⅛tsp ground black pepper

Combine all ingredients of dressing in a blender and blend until smooth. Arrange salad ingredients onto serving plates. Pour over dressing. ENJOY!!!
