Chicken & Black Rice Salad

INGREDIENTS:


THE SALAD
- 140g(dry weight) black rice, cooked
- 2 red bell peppers, diced
- 230g roasted chicken, sliced
- cilantro and mint, coarsely chopped

THE DRESSING
- 1tbsp extra virgin olive oil
- 1tbsp rice wine vinegar
- 1tbsp soy sauce
- 1/2tsp sesame oil
- 1tsp sugar
- 1/2tsp ground ginger
- 1 jalapeno, seeded and minced
- 6 garlic cloves, minced
- juice of 1 lime

1. Place all ingredients of the salad in a big bowl.

2. Pour the dressing over the salad. Toss well.

3. Chill for hours before serving.
